Super Greens Rice Salad and Iced Carrot and Capsicum Soup

Here are the recipes from today's offerings.

Super Greens Rice Salad

Ingredients

2 bunches boc choy chopped

2 bunches broccoli chopped

2 zucchini sliced

2 cups rice

2 lemons juiced

Method

1. Pour rice into a pot, and add 3 cups water, and cook on a high heat until water is absorb and rice is tender.

2. While rice is cooking, steam the vegetables approx 10 minutes or until the vegetables are a bright green.

3. In a large bowl, mix the rice and vegetables together, mix in the lemon juice and serve.

 

Iced Carrot and Capsicum Soup

Ingredients

5 Carrots chopped

3 Red Capsicums sliced

2 Apples chopped

1 onion chopped

1.2 litres of vegetable stock

2 tablespoons olive oil

Mint to garnish

Method

Heat oil in saucepan, add in the onions and cook gently for 5 minutes.

Add in the Carrots, capsicum and carrots, and pour in the stock.

Bring to a boil, than reduce heat, cover and simmer for 20 minutes.

Puree the soup in a blender until smooth.

Let soup chill for approx 2 hours.

Season with salt, pepper and mint.
