Stir-fry Vegetable Salad and Lettuce and Cabbage Salad
It's Foodies Monday and here are the recipes from today.
Both of these recipes are great base starters that you can easily layer upon.
Stir-fry Vegetable Salad
2x Onions chopped
2x Zucchini sliced
2x capsicums sliced
2 tbs olive oil
1 tsp paprika
1 tsp dried basil
1 tsp dried rosemary
2 tbs balsamic vinegar
Heat oil in wok and add in the onion and cook until onion slightly turns brown.
Add in the capsicums and cook for 2 minutes.
Add in the zucchini and cook until zucchini turns bright green.
Toss in a salad bowl, than mix the vinegar paprika and herbs together.
Drizzle dressing over vegetables and serve.
Lettuce and Cabbage Salad
1 head cos lettuce chopped
1/2 green cabbage chopped
2 tomatoes sliced
2 tbs white vinegar
1/4 tsp cayenne pepper
1 tsp dried parsley
Mix together the vinegar, cayenne pepper and parsley and put aside.
In a salad bowl mix together the lettuce, cabbage and tomatoes.
Drizzle dressing over salad and serve.
