Silverbeet and Zucchini Salad and Celery, Fennel and Ginger Soup

Here are the recipes from today's offerings.

Silver-beet and Zucchini Salad

Ingredients

1 bunch silver-beet chopped

4 Zucchini sliced

1 yellow capsicum sliced

1 red capsicum sliced

1 green capsicum sliced

2 cups sesame seeds

2 lemons juiced

2 tablespoons olive oil

Method

Heat olive oil in pan and lightly saute silver-beet, zucchini and capsicum.

Toss into a large salad bowl and toss sesame seeds into pan and lightly roast until they turn a light golden brown.

Toss sesame seeds in with the rest of the ingredients, dress with lemon juice.

 

Celery, Fennel and Ginger Soup

Ingredients

1 bunch celery chopped

1 fennel bulb chopped

2 potatoes chopped

1 knob ginger sliced

1 lemon juiced

Method

In a large pot place all ingredients except for the lemon and fill with water to just cover.

Boil for approx 20-30 minutes until vegetables are tender.

Blend together in a blender until smooth, and stir in lemon juice.
