Silver-beet Salad and Spring Lamb Casserole

Here are the recipes for today's creations enjoy!

Silver-beet Salad 

This Salad is great as a starter for you to layer onto. You could easily add some tomatoes and cucumbers for extra flare, or a bit of bacon or eggs for some extra protein, or just as easily enjoy as is.

Ingredients:

1kg silver-beet chopped

25g butter

2 garlic cloves chopped

1 bunch spring onions chopped

Method:

Heat the butter in a pan and throw in the garlic and sizzle for a moment.

Add in the silver-beet and spring onions and cook until soft.

Season with salt and pepper and serve.

 

Spring Lamb Casserole

Ingredients:

500g boned shoulder of lamb diced

1 onion chopped

butter and olive oil

600ml water

300ml red wine

4 carrots cut into sticks

4 potatoes quartered

500g string beans

Mint or Parsley to Garnish

Method:

Fry the onion in the butter and onion until soft, than add in the lamb and brown.

Add in the water and wine, bring to a boil than reduce to a simmer, cover and cook for 1 1/2 hours.

Add in the carrots and potatoes and cook for a further 30mins.

Add in the beans and cook for 10mins.

Season and serve.
