Sauteed Capsicums and Osso Bucco and Sweet Potato and Pumpkin Soup

Here are the recipes from today's offerings.

Sauteed Capsicums and Osso Bucco

Ingredients

4 pieces of Osso Bucco

5 carrots chopped

1 red, green and yellow capsicum chopped

2 onions chopped

500g mushrooms sliced

1/4 teaspoon dried basil

1/4 teaspoon paprika

salt and pepper

4 tablespoons of olive oil

Method

Heat olive oil in a large pan.

Add the Osso Bucco and brown on each side.

Add in the all the vegetables, and season with herbs and spices,

Cover and turn down heat and cook for approx 30 mins.

Sweet Potato and Pumpkin Soup

Ingredients

1 sweet potato chopped

3 potatoes chopped

1 pumpkin chopped

Method

In a large pot add the vegetables and cover with water.

Bring to a boil and turn down to a simmer until vegetables are tender.

Blend together to a nice creamy texture and enjoy.
