Roasted Stuffed Vegetable Capsicums and Chicken Meatballs in Tomato Sauce

Roasted Stuffed Vegetable Capsicums
Ingredients:
2 large capsicums halved and seeded
1 eggplant sliced and diced
4 small tomatoes diced
2 chillies sliced
1/2 zucchini sliced
50g olives
2 tablespoons olive oil
2 teaspoons oregano
Method:
Pre-heat oven to 180 degrees Celsius.
Place capsicums on a baking tray layer all ingredients except the olive oil and oregano into the capsicums.
In a small bowl mix together the oregano and olive oil and drizzle over the capsicums.
Bake for approx 25 minutes.
Chicken Meatballs in tomato sauce
Ingredients:
Meatballs
500g chicken mince
1 medium onion minced
2 tablespoons parsley chopped
1 egg
1/2 cup breadcrumbs
salt and pepper to taste
2 tablespoons oil
Tomato Sauce
1 medium onion chopped
440g chopped tomatoes
2 tablespoons tomato paste
1/2 cup water
1/2 teaspoon oregano dried
1/2 teaspoon parsley dried
Method:
Place all ingredients for the meatballs except for the olive oil into a bowl and mix together, kneed mixture into balls.
Heat oil in frying pan and saute the meatballs until they change colour on both sides.
Remove from pan.
Add onion and saute than add remaining ingredients for the sauce into the pan, bring to a boil, return the meatballs to the pan and simmer for 30 minutes.
Serve with rice, spaghetti or pour over the stuffed capsicums from earlier.
