Ratatouille and Spanish Chicken and Chickpea Salad

Happy Monday Everyone!

Here are the recipes from today's creations.

Ratatouille

Ingredients:

400g of chopped tomatoes

5 tbsp olive oil

2 large eggplants cut into chunks

4 small zucchini sliced

1 red capsicum seeded and cut into chunks

1 yellow capsicum seeded and cut into chunks

1 onion chopped

2 garlic cloves minced

1 tbsp red wine vinegar

Handful of basil

Method:

Heat oil in a wok.

Add in onion and garlic and lightly cook until soft.

Add in eggplants and brown, then add in zucchini and cook until golden.

Stir in the vinegar, tomatoes and basil, and cook for approx 5 minutes.

Serve.

Spanish Chicken and Chickpea Salad

Ingredients:

800g of Chickpeas

300g tomatoes diced

290g preserved peppers

2 grilled chicken breasts

small bunch of parsley

Dressing:

2 garlic cloves crushed

2tbsp apple cider vinegar

6 tbsp juice from preserved peppers

1/2 tsp smoked paprika

1 lemon juiced.

Method:

Make the dressing first, mix together the garlic, vinegar, pepper oil, smoked paprika and lemon juice until smooth.

In a large bowl, mix together the chickpeas, tomatoes, and peppers.

Mix in the chicken.

Drizzle the dressing over the salad, mix and serve.
