Protein Fruit Salad and No Mayo Coleslaw

Here are the recipes from today's offerings.

Protein Fruit Salad

I have listed the fruit I used in this salad however, use whatever fruit you have o hand.

Ingredients:

3 x blood plums

2 x apricots

1 x nectarine

3 x scoops of natural yoghurt

1 x tablespoon chia seeds

1 x tablespoon flax seeds

Cinnamon and honey to taste.

Method:

Scoop yoghurt into bowl.

Dice fruit and sprinkle over yoghurt.

Sprinkle chia and flax seeds over fruit.

Sprinkle cinnamon and drizzle honey over fruit and seeds to taste.

Enjoy.

No-Mayo Coleslaw

This one was inspired when watching Camila Alves on a YouTube clip and loved her recipe, its not her exact recipe as I didn't have all the ingredients Camila uses, so improvised a little.

Ingredients:

2 cup carrot shredded

1/4 red cabbage

1/2 green cabbage

2 tablespoons lemon juice

2 tablespoons white wine vinegar

2 tablespoons apple cider vinegar

Chilli flakes to taste

Method:

Grate carrots, red and green cabbage, and mix into a large salad bowl.

Mix together lemon juice, white wine vinegar and apple cider vinegar.

Add chilli flakes to taste to dressing mixture.

Drizzle dressing over coleslaw.

Enjoy.
