Protein Berry Pancakes and One Pot Spinach and Bean Risotto

Here are the recipes from today's cook up.

Protein Berry Pancakes

Ingredients

2 cups almond milk

1 cup oats

1 cup flour

1 egg

6 scoops protein powder

1 teaspoon cinnamon

1 cup frozen berries

Method

Place all ingredient in a blender and mix until a gooey.

Spray pan with olive oil and heat with a large spoon, scope mixture into pan and wait for bubbles appear than flip over and let other side brown.

Repeat with the rest of the mixture.

 

One Pot Spinach and Bean Risotto

Ingredients

2 cups rice

6 cups vegetable stock

500g string beans chopped

500g spinach leaves

2 onions diced

400g chopped tomatoes

1/2 teaspoon turmeric

1/2 teaspoon black pepper

Method

Melt 1 tablespoon butter in a large pot and add the rice, stir until rice is coated with melted butter.

Pour in the stock and bring to a boil.

Add in the onions, beans, spinach, chopped tomatoes and stir.

Add turmeric and pepper stirring, turn down the heat to a simmer and cook for approx 20 minutes or until all liquid is absorbed.
