Potato Pancakes and Beef and Vegetable Casserole

Happy Monday Everyone!

Here are the recipes from today's offerings.

Potato Pancakes

Ingredients

8 potatoes grated

2 onions minced

2 cups of peas, corn and carrots

2 eggs beaten

4 tablespoons flour

Olive oil 

Method

Mix all the vegetables together in a large mixing bowl.

Mix in the eggs, than the flour.

Heat 4 tablespoons of olive oil in a large fry pan and pour 4 1/4 cups of mixture into the pan using the base of the cup to flatten each pancake.

Cook for approx 5 minutes or until golden brown, than flip over and repeat.

Serve with some sour cream or apple jam.

 

Beef and Vegetable Casserole

Ingredients

500g diced beef

4 cups mixed frozen vegetables

400g diced tomates

1/2 teaspoon mixed herbs

salt and pepper

Method

Preheat oven at 180 degrees.

In a casserole pot mix all the ingredients together.

Place in oven and roast for approx 1 hour.

Serve with crusty bread or on a bed of rice.
