Potato Pancake Meatpie and Mix nut, fruit and Oat biscuits

Here are the recipes from today's offerings.

Potato Pancake Meat-pie

Ingredients

7 potatoes

1 onion diced

500g beef mince

3 cups frozen pea and corn mix

4 teaspoons gravy mix

2 eggs

2-3 cups flour

4 tablespoons olive oil

2 teaspoons dried mixed herbs

salt and pepper

Parmesan or Ricotta   

Method

In a large pot boil the potatoes until tender, than mash them into mash potato.

Transfer the mash potato into a large mixing bowl and add the eggs and slowly add the flour kneading until you have a nice firm dough. 

Leave dough to rest, and in a fry pan heat 2 tablespoons of oil and add the onions cook for 2 minutes, than add the mince meat and brown.

Once meat is browned add in the peas and corn stirring through than add the gravy mix making sure the mixture in coated through.

Take mince off heat and leave to the side. 

Divide the potato dough into two halves (this will actually be enough for four pieces of dough). On a floured surface roll out the two pieces of dough.

Heat the remaining olive oil in a large pan and layer the first piece of dough, sprinkle the dough with the Parmesan or ricotta enough so you have a nice coat of cheese over the dough.

Heap the mince mixture over top the cheese, than sprinkle more cheese over top.

Layer the second piece of dough over joining the ends with the bottom layer, you may need to use a fork to help join the ends, making sure the mixture will not fall out.

Cover and cook for approx 10 minutes than with the lid still on flip the pie onto the lid and than slid back into the pan to cook the other side.

Take out of pan and serve with salad.

 

Mixed Nut, fruit and Oat Biscuits

Ingredients

100g butter softened

85g sugar

2 egg beaten

50g oats

50g mixed nuts

50g mixed dried fruit

85g flour

Method

Preheat oven to 180 degrees and butter two baking sheets.

In a bowl beat the butter and sugar for 5 minutes until light and fluffy.

Beat in the eggs, than stir in the rest of the ingredients.

Drop dessertspoons of the mixture on the baking sheet making sure you have space in between.

Bake for approx 15 minutes until a pale golden than cool.

Serve on a platter with cheese
