Pan Grilled Beef and Garden Salad and Green Capsicum and Chilli Risotto

Here are the recipes from today's creations in the kitchen, I hope you enjoy them.

Pan Grilled Beef and Garden Salad

Ingredients:

500g Chunk beef diced

1x small onion chopped

1x garlic clove sliced

1 tbls olive oil

1 small iceberg lettuce

2 tomatoes sliced

3 stalks of celery chopped

1 lemon juiced

salt and pepper 

Method:

In a pan heat the oil, add in the onion and garlic and cook for approx 5 minutes.

Add in the beef and cook for approx 10 minutes.

In a bowl mix together the lettute, tomatoes and celery, add in the beef, squeeze in the lemon juice and season with salt and pepper.

Green Capsicum and chilli risotto

Ingredients:

1 onion chopped

1 garlic clove sliced

1 green capsicum sliced

50g of butter

2 cups rice 

2 litres of chicken or vegetable stock

1/2 cup preserved chillies

handful of parsley and dill chopped

Method:

In a pot melt the butter and add in the onion, cook for 2 minutes.

Add in the garlic and capsicum and cook for another 2 minutes.

Stir in the rice and keep stirring until the rice is coated with the juices.

Ladle in 1 ladle of the stock and keep stirring until absorbed.

Slowly stir in the rest of the stock and cook until the rice is soft and chewy.

Take pot of heat and stir in the chillies, parsley and dill.

Let rice sit for approx 10 minutes.

Serve as is or with a side of your favorite protein.
