Noodle Soup and Mediterranean Vegetable Soup

As I mentioned on this morning's post, my body's feeling a bit sluggish from being in lock-down since March.  So this week I thought I'd spruce up the insides a bit with a nice soup cleanse.  

Here are the recipes for those who want to cleanse with me.

Noodle Soup

Ingredients

3x Bok choy diced

4x stalks celery diced

1x head of Broccoli chopped

4x cups chicken stock

1/2 teaspoon ground cumin

1/2 teaspoon dried basil

2x lemons juiced

400g Noodles

Method

Place vegetables in a medium sized pot with stock and bring to a boil.

Add the cumin and basil and simmer for 10 minutes

Add noodles and cook for approx 5 minutes

Add in Lemon juice and stir before serving.

 

Mediterranean Vegetable Soup

Ingredients

2x onions chopped

1x red pepper seeded and chopped

2x Zucchini sliced

400g chopped tomatoes

70g tomato paste

2 litres of vegetable stock

1/2 teaspoon dried basil

Method

Pour stock into large pot and add in the vegetables, chopped tomatoes and tomato paste, and bring to a boil.

Reduce heat and simmer of 10 minutes, stir in the dried basil leaves and let cook for a further 5 minutes.

Serve.
