Mixed Berry and Apple Rice Pudding and Spiced Chicken and Pumpkin Soup

Here are the recipes from today's offerings.

Mixed Berry and Apple Rice Pudding


1 cup rice

2 apples sliced

3 cups mixed frozen berries

2 1/2 cups milk

4 tablespoons cornflour

2 tablespoons honey



Pour rice into saucepan with 2 cups water and cook until water is absorbed and rice is soft.

Add mixed berries and apple with 2 cups of milk to the rice, and honey, stir until fruit and rice mixed well.

While waiting for milk to come to a boil, mix corn flour with 1/2 cup of milk, once rice, fruit mixture boiling, add cornflour milk mixture and stir until mixture is thickens.

Pour into serving bowl sprinkle with cinnamon and let cool in refrigerator for approximately 4 hours.



Spiced Chicken and Pumpkin Soup


500g chicken

1/2 pumpkin diced

1 red capsicum diced

1 onion diced

3 carrots chopped

1 garlic clove minced

2 tsp ground ginger

1 tsp chilli flakes

1/2 tsp ground turmeric

2 tsp cumin

1 tsp ground coriander


Cook chicken in large pot with 2 litres of water, let cook until chicken is cooked through and stock has formed. Remove chicken from pot and set aside.

Add vegetables to stock and bring to a boil.

Turn heat down to a simmer and add in spices cook for approx 10 mins.

Add chicken back into soup and simmer of another 10 mins.

Serve and enjoy.
