Mediterranean Omelette and Vegetable Bolognese
As mentioned this morning, today's inspiration came from the fact I needed to use up all the remaining produce in my fridge before I head off to my parents place.
So with that in mind here are the recipes I came up with.
Mediterranean Omelette
Ingredients
5 eggs beaten
3 peppers sliced
1 large tomato diced
1 Zucchini halved and sliced
2 small onions chopped
1 bunch of spinach chopped
2 tablespoons olive oil
Method
Heat oil in pan and add onions cook until slightly browned, than add in peppers and zucchini cook for a couple of minutes.
Add in the tomatoes and spinach, pour in the beaten eggs and turn down to a low heat.
Cook until eggs are cooked through,
Enjoy.
Vegetable Bolognese
Ingredients
1 Zucchini sliced
2 small onions chopped
1 punnet cherry tomatoes halved
3 bunches spinach chopped
1kg of carrots chopped
3 chillies chopped
2 tablespoons olive oil
1 jar bolognese sauce
Method
Heat oil in pan and add in onions cook until brown.
Add in chillies and carrots and cook for a couple of minutes, add in the zucchini.
Add in the tomatoes and spinach. Stir in the bolognses sauce turn down the heat and simmer for 30 minutes.
Serve with pasta or rice.
