Meatloaf and Spiced Bean and Vegetable Soup
It's Foodies Monday and here are the recipes from today's cooking session.
1kg beef mince
3 cups frozen vegetables
1 tablespoon mixed herbs
Ground pepper to taste
Preheat oven to 180 degrees.
In a large bowl mix all the ingredients together until blended together in a meaty dough.
Pour into a baking dish and place into the oven and bake for approx 1 hour or until mince in cooked through and top is crispy.
Serve with salad or rice.
Spiced Bean and Vegetable Soup
2 cups black beans
2 cups chicken or vegetable stock
4 cups frozen vegetables
400g chopped tomatoes
3 litres water
1 teaspoon chilli flakes
1 teaspoon cumin
Fill large stock pot with water and beans and set to boil.
Cook beans until they start to get tender, add in the stock, vegetables, chopped tomatoes, bring back to a boil.
Add in chilli flakes and cumin and turn down to a medium heat and simmer for approx an hour or until beans are tender and cooked through.
