Cranberry, Date and Seed Biscuits and Greek Style Pumpkin Pie

As I mentioned this morning, today's recipes are some guilty pleasures, because we need to splurge every so often.

Cranberry, Date and Seed Biscuits

Ingredients

1 cup all purpose flour

1 cup oats

1/2 cup cranberries

1/2 cup chopped dates

1/3 cup chai seeds

1/3 cup flax seeds

1/4 cup honey

1/2 cup melted butter

Method

Preheat oven to 180 degrees

Mix all the dry ingredients and dried fruit into a large mixing bowl.

Add the honey and melted butter and stir until you have a gooey mixture.

If the mixture is to dry add 2 tablespoons for water to give the mixture a bit moisture to make it gooey.

Spoon mixture onto a lined baking tray and bake for approx 10-15 minutes or until biscuits are a golden brown.

 

Greek style pumpkin pie

Ingredients

1 pumpkin grated

200g rice

1/2 cup sugar

4 tablespoons cinnamon

Pastry

Method

Preheat oven to 180 degrees.

I made my pastry but I have also used store bought pastry as well.

Mix the pumpkin and rice together.

Blend the sugar and cinnamon together.

Mix the cinnamon sugar into the pumpkin and rice mixture.

On a baking tray lay one piece of pastry onto the tray.

Layer the pumpkin rice mixture over top.

Layer a second piece of pastry over top and join the two pieces of pastry together making sure they are well joined to avoid spillage.

Bake for approx 40 mins until the pumpkin and rice is cooked and pastry is a golden brown.
