Breakfast Fruit and Seed Slice and Green Curry Chicken Noodles

Here are the recipes from today's creations.

Breakfast Fruit and Seed Slice

Ingredients

225g plain flour

2 tsp baking powder

2 large eggs

50g butter melted

175ml almond milk

1/3 cup clear honey

140g pitted dates chopped

85g dried cranberries

140g frozen mixed berries

1 cup chai seeds

1 tsp ground cinnamon

Method

Preheat oven to 200 degrees Celsius and line baking tray with baking paper.

Sift flour and baking powder into a large mixing bowl.

Lightly beat the eggs, then stir in the melted butter, milk and honey.

Add the egg mixture to the flour along with the remaining ingredients.

Stir quickly but don't overwork the mixture.

Pour into the baking tray and bake for 20-25 minutes or until the top is a pale golden.

Let it cool before slicing.

 

Green Curry Chicken Noodles

Ingredients

1 onion chopped

1 green capsicum sliced

5 mushrooms sliced

2 chicken breasts diced

500g mixed vegetable medley

2 tablespoons olive oil

200g green curry simmer sauce

400g noodles

Method

Heat olive oil in wok and add in onions cook for 2 minutes.

Add in the chicken and cook until chicken in cooked through.

Stir in the capsicums and cook for 2 minutes

Stir in the mushrooms stir until mushrooms are coated with mixture.

Add in the vegetable medley, stir in the simmer sauce than turn down heat and simmer for 10 minutes.

Stir in noodles and enjoy.
